    • This is my mom's recipe. It is the best carrot cake I ever tasted.

      Carrot Cake

      2 cups sugar
      2 cups flour
      2 tsp. cinnamon
      1 tsp. baking soda
      1/2 tsp salt
      1 1/2 cups Wesson oil
      4 eggs (add 1 at a time)
      3 cups grated carrots

Sift dry ingredients together. Add in remaining ingredients. Bake in 3 8 inch cake pans at 350 degrees for 30 minutes.

      Icing

      1 stick butter
1 large or 2 small packages cream cheese
      1 box powdered sugar
      2 tsp. vanilla
1 cup nuts (walnuts or pecans chopped)

Mix butter and cream cheese to creamy. Add powdered sugar, vanilla and nuts.

Just been to lunch at P.F.Changs with a friend. Ended it with the Great Wall of Chocolate Cake. Man that thing's big! I managed about 1/3 of it. The rest is in the fridge

Wasn't bad at all. I had the crispy honey chicken w/brown rice lunch thing.

The biggest burger I've ever had was down in FL at Jungle Jims "The Headhunter". If you manage it all there's a prize...you guessed it, another one free LOL
