You need to check the Canadian Immigration website.
She can enter(visit) the country for 180 days without a visa of any kind. She will need her photo I.D. (usually drivers license) and her birth certificate.
Canada recognises common law which depending on the circumstances is valid after 1 month, or 3 months, or 6 months (you need to check this because it depends on the province). If you live with her in the US and then bring her back, this counts too. Be careful because after the alloted time, either party can sue for property - just as in a divorce - and there are tax implications. There are cases of people living together for 1 month and one party 'loses' it all! If there are children, you will be responsible for child support - whether or not you are married or common law or just a one night stand.
If she becomes Canadian, she may lose her American citizenship. But that is a long way down the line. She will not ba able to work at some jobs if she is not a citizen.
Go to Immigration Canada - it should all be there.
Good Luck and it is not as difficult as it all sounds - we inter marry all the time.
I am from Alberta.

Hi folks - hoping to find a little clarity on unions of US and Canadian couples...
As things stand now, we are planning on moving her from the US to Canada. What are some of the procedures, guidelines and rules involved that we should watch for?
Can she just come down and stay with me while we see if things will work as a couple or do we have to file paperwork of some kind?
One thing that concerns her if she were to become a Canadian citizen, is to loose her US citizenship.
Thanks for any suggestions offered friends
