here's an awesome recipe that i would like to share with the ILW discussion board members:
1 full garlic
5-7 freash basil leaves
1 cup of extra virgin olive oil
1/2 cup of water (from your linguini water)
1 can of chopped clams
keep some salt, pepper, and crushed red peppers on stand by
start of by boiling your water
cut up all your garlic and basil leaves
pour 1 cup of extra virgin olive oil in a low flame pan
once warm, put in your garlic & basil. leave a good pinch of garlic to the side.
brown your garlic. DO NOT BURN!
add a pinch or two of crushed red peppers, salt, and pepper
once your water starts to boil, through in your linguini
cook linguni for about 8-10 min. about the 5 min mark, take 1/2 cup of your linguini water and pour it into your olive oil.
next add the can of chopped clams with all its juice into the pan of olive oil/basil/garlic.
cook for about 5 min or until your linguini is done. just before your clam sauce is done add the last "good pinch" of garlic. (this will add a more "bit" to the garlic.
drain linguini. put a bit of crushed red peppers in the linguini
put linguini on your plate and add your oil/galic sauce
salt to taste.
serve w/ a good italian or french bread
