my husband is disabled, and hasn't filed for taxes in the last 3 years. what documents do we need to prove that he doesn't make the amount enough for him to file for taxes (as per VA and SSI)? also, does the "other" sponsor have to be present when we go for our interview?

Yes you can get an additional Affidavit of Support from friends. If you can arrange for an firm job offer duly notarized that will also help you a lot with this Affidavit of Support. Do not forget that in any case your spouse also has to file an Affidavit of Support for you.
