First up:

My UK passport expired in October of last year. Do I need to apply to the passport office here to get it renewed, or will the USCIS accept a copy of the expired one, along with my I-94? Also, what pages of the passport does the USCIS require to see?

USCIS does not need copy of your passport, they need it in order to put stamp indicating their action.

Therefore, you should go there with a valid passport.
