I know this is basic but I (being a USC) recently married a B-1 immigrant. Can we mail the I-130, the EAD form, and the I-485 all in at the same time or do we have to wait until the I-130 is approved?

yes you can mail all of them together including the I-131 (advance parole travel document) if you intend international travel if your spouse has not overstayed his/her visa for more than 180 days.
